Gray Sole feeds on crabs, lobsters, shrimp, and other shellfish as well as starfish and small fish such as Capelin.

Gray Sole is a lean fish that has a mild flavour with a soft texture. It cooks up fully white and has a medium flake that comes apart easily once cooked.
Common size of Gray Sole is between 45 and 65 cm and 3 lbs. Some individuals grow to 78 cm and weigh upwards of 6 lbs, and live for 25 years.

Gray Sole is caught around Iceland and at depths of 20 — 1500 m, with ideal ocean temperatures of 2°C — 6°C. The largest fishing areas are on the Western and Southern coasts.

Management is also supported by other measures such as area restrictions, fishing gear restrictions, and the use of closed areas to conserve important vulnerable habitats.
Gray Sole is a little flatfish. It has a small head and very small teeth.
