Flavour Profile

Our Atlantic Cod is known for its snow white, pearlescent flesh, and gentle but distinctive flavour. It has a mild and slightly sweet taste with large flakes that fall apart easily when cooked.

Summary

The average size of Cod caught in Iceland is in the range of 55 to 90 cm. Cod can grow quite large; where the largest individual ever caught in Icelandic waters measured 186 cm and was 17 years old.

Our Fishermen

As a family company with deep roots in the fishing villages of Iceland, Salties Imports chooses its fishermen and producers carefully to make sure the product is of the highest quality and freshness. Most are independent fishermen in Iceland who use small boats.

Fishing Grounds

Atlantic Cod is caught all around Iceland and at depths of 100 — 200 m, with ideal ocean temperatures of 4°C — 7°C. The largest fishing areas are found off the south western coast, the Westfjords, and off the south eastern coast.

Salties Traceability Program

All Cod sold by Salties Imports comes with traceability documents showing boat numbers, fishing gear, landing sites, and processing locations. It is our belief that transparency is a necessity in seafood so our customers know exactly all details of the product. 

Fisheries Management

Fishery management in Iceland is based on extensive research on the fish stocks and the marine ecosystem. A catch limitation system is the cornerstone of the Icelandic fisheries management system. Management is also supported by other measures such as area restrictions, fishing gear restrictions, and the use of closed areas to conserve important vulnerable habitats. Our Atlantic Cod is Oceanwise certified and carries the oceanwise mark. 

Fun Fact

Cod makes up such an important part of the Icelandic culture that for centuries it served as our coat of arms: A butterfly Salted Cod with a golden crown, situated on a red shield.
