Baked Wolffish with Saffron Rice


Wolffish is not the prettiest fish in the Ocean, but it surely tastes the part. It feeds on shellfish which means that it has a unique flavour, similar to Monkfish but with a firm texture like Tusk. This recipe combines the firm and tasty Wolffish with the beautiful Salties Scampi to produce this fantastic dish. Regardless of whether you are cooking for the family, or for guests, everyone will be amazed.

We recommend serving with green salad, home-made bread, and Ice cold white wine.

This recipe serves four people.


15 — 20 Saffron threads
800 g Salties Striped Wolffish
Lemon juice
1 Red Onion
Few broccoli heads
1 Red Pepper
1 can Green Asparagus
200 g Salties Scampi meat
250 g Shredded cheese
4 — 5 oz Blue cheese
250 ml 15% cream

Cook the rice according to the directions on the packaging and have the saffron threads in the water the whole time. You can absolutely add more saffron threads to the rice, it makes it even better. Remove the saffron threads once the rice are cooked (they float to the top). Once the rice are done, place them on the bottom of an oven dish.

Cut the Wolffish into pieces and place them raw on top of the rice. Season with salt and pepper and squeeze the lemon juice over. Cut the red onion, broccoli, and red pepper into pieces and spread over the fish along with the asparagus.

Pat dry the Scampi and place it over the vegetables in the oven dish. Place the shredded cheese over it all, then spread the blue cheese over the shredded cheese.

Lastly, pour the cream over the cheese mixture.

Bake the fish for 20 — 30 minutes in an 180°C oven or when the cheese has melted and is golden brown.
