Spotted Wolffish in Coconut Satay

Bulging eye and jagged tooth, the Atlantic Wolffish won’t win any beauty contests, but this incredible fish is close to our hearts here at Salties. Ok, so we’re fish people, but we think anyone who gets to know this amazing animal will see the beauty and how amazing a fish it is. It is fantastic not only to the taste, bit also to learn about. Like how its body produces natural antifreeze to allow it to survive in the cold Northern Atlantic, or how the male cares for his offspring. One may ask why the Wolffish loses its fierce teeth while taking care of the youngsters. Enjoy this favourite recipe!

Ingredients

For 4 – 5 People

Fish

1000 g Spotted Wolffish fillets

1 1/2 cup Satay sauce

1 can Coconut Milk

1 Pepper, cut in cubes

1 Zucchini, cut in cubes

3 Carrots, cut in cubes

1 Red Onion, cut

1 small Broccoli, cut

Olive oil

Salt and Pepper

Butter Fried Spinach and Garlic

1 Small bag go fresh Spinach

1 tbsp Butter

2 Garlic cloves

Salt and Pepper

Directions


Fish

  1. Preheat the oven to 400°F
  2. Fry the Vegetables in oil in a pan until they soften
  3. Add the Satay and Coconut milk to the pan and mix with the Veggies
  4. Pour the mix into an oven dish
  5. Add Olive oil to the pan and fry the fish for 2 min on each side, add Salt and Pepper
  6. Place the fish on top of the Satay mix and bake in the oven for 5-10 min
  7. Serve with the Butter Fried Spinach and Garlic

Butter Fried Spinach and Garlic

  1. Everything is fried on a pan in the Butter for a short time until the Spinach softens. Add Salt and pepper and serve right away.
  2. Enjoy!
