Salmon with Tomato Salsa
The Wild Atlantic Salmon is the surfer among the fish species. It is a remarkable fish that has so many secrets and so many mysteries that it can surprise us constantly. Salmon starts its life in a fresh water stream, where it spends its first 1-4 years before turning to the Ocean. In the Ocean, they travel for thousands of kilometres away from the rivers where they were born but they will find their way back to the exact same stream when they are ready to spawn. During their time at sea, they can sense the change in the Earth’s magnetic field through the iron in their lateral line, which helps them navigate back home. When it is time to head back to their rivers, they will move to the sea surface currents that transport them back home. It is a major misconception that Salmon swim thousands of kilometres at sea; instead they surf through surface currents at sea. They are true Beach Bums.
It is best to make the salsa before you cook the Salmon
For 4 People
750 g Salties Salmon
1/4 cup Olive oil
1 tbsp Lemon juice
2 tbsp Fresh Coriander, chopped
Salt and Pepper
4 Plume Tomatoes, chopped
1/2 Red Onion, chopped
1/2 cut Coriander, chopped
3 cm Cucumber cut lengthwise, deseeded and chopped
1 cm Red Chili, chopped
1 Lime, Juice and Zest
2 tbsp Olive oil
Salt and Pepper
- Blend the Olive oil, Lemon juice, Coriander, Salt and Pepper in a bowl. Lather the Salmon with the Oil mix.
- Grill on the BBQ, skin up for 4 min. Then turn it skin down, lather with the oil mix and grill for another 5-7 min with the skin down
- Blend all the ingredients in a bowl and let sit for a few min before serving.
