Greek Style Cod

This Baked Cod recipe takes a nice Greek twist on the simple baked Cod, where you coat it in spices and quickly sear it, then bake it with lemon juice, olive oil, and plenty of garlic.

Ingredients

2 lbs Salties Cod Fillets
5 Garlic cloves, minced
1/4 cup Chopped fresh Parsley leaves

5 tbsp fresh Lemon juice
5 tbsp Extra Virgin Olive oil
2 tbsp melted butter

1/3 cup Flour
1 tsp ground Coriander
3/4 tsp sweet Spanish paprika
3/4 tsp ground Cumin
3/4 tsp Salt
1/2 tsp Black Pepper

Instructions

Preheat oven to 400°F.

Mix the Lemon juice, Olive oil, and melted butter in a bowl and set aside. In another bowl mix the flour, spices, salt and pepper. Set next to the lemon juice mixture for now.

Pat the Cod Fillets dry. Dip into the lemon juice mixture, then dip it into the flour mixture. Shake off the excess flour.

Heat 2 tbsp of Olive oil in a skillet over medium high heat, make sure the oil is hot and crackling but not smoking. Add the Cod and sear on each of its sides to give some colour but do not cook it fully, a couple of minutes on each side should do it. Remove from the heat.

Add the minced garlic to the remaining Lemon Juice mixture, and mix. Drizzle all over the Cod fillets in the pan. Bake in the heated oven until it begins to flake easily with a fork, about 10 minutes but check periodically. Remove from the heat and sprinkle the chopped parsley.

We recommend serving with some rice and a Greek Salad.
