Coriander Butter Scampi

Putting Scampi on the grill during any season is a classic for us here at Salties. It is simple, elegant, and tastes amazing. This recipe combines Coriander and Garlic with the beautiful Scampi and we highly recommend trying it out.

For 4 – 5 People


15 Large Scampi Tails

2 Garlic cloves, pressed

2 Limes, juice

1 Red chilli

Coriander Butter

90 g Butter

3 Garlic cloves

3 — 4 tbsp Coriander

BBQ Garlic Bread

1 Ciabatta bread

150 g Butter

5 Garlic cloves

3 tbsp Parsley, chopped

3 tbsp Parmesan cheese, shredded



  1. Using scissors, cut the Scampi Tail along the sides, once cut, remove the underside of the shell exposing the meat.
  2. Loosen the meat without removing it from the shell.
  3. Press the garlic, finely chop the red chilli, squeeze the juice from the limes, and combine.
  4. Brush the mixture onto the Scampi and let sit for 30 minutes.
  5. Proceed to the Coriander Butter part.
  6. Grill the Scampi with the meat side down for 1 — 2 minutes.
  7. Turn over and cook for 2 minutes.
  8. The cooking time depends on the size of the Scampi and make sure that you brush the Coriander butter over the Scampi a few times while grilling.

Coriander Butter

  1. Melt the butter in a pot under medium heat. Press the garlic into the pot and add the chopped Coriander.
  2. Remove from the heat and return to the Scampi.

BBQ Garlic Bread

  1. Slice the ciabatta bread.
  2. Press the garlic and combine it with the parsley, butter, and parmesan cheese. Mix it well together.
  3. Grill the bread for a few seconds on high heat. Turn the bread over and brush it with the mix.
  4. Place on the heating rack of the grill until it turns a nice colour.
