Cajun Tusk, BBQ Style

Tusk is among the least know members of the Cod family. One that very few know and even fewer have tasted. For the Salties Crew, the Tusk is one the favourites. It is a firm fish, easy to cook, great on the BBQ and some say it tastes like lobster! For you, Tusk beginners, this is a great intro dish that will lead you into the wonderful culinary world of Tusk. Its summer, its sunny, and it has a kick.

The fish is served with fresh Salad, BBQ Garlic bread, and grill sauce.


For 5 People


750 g Tusk

Olive oil

1 tbsp Garlic powder

1 tbsp Onion powder

1 tsp dried Oregano

1 tsp dried Timian

1 tbsp Paprika

1/2 tsp Cayenne

Salt and Pepper

Grill Sauce

3 tbsp Sour Cream

3 tbsp Greek Yoghurt (plain)

1/2 tsp dried Oregano

1.2 tsp dried Timian

2 Garlic gloves, pressed

1 tsp Maple syrup

Salt and Pepper

BBQ Garlic Bread

1 Ciabatta bread

3/4 cut Butter

5-7 Garlic cloves, pressed

3 tbsp fresh Parsley, chopped

3 tbsp Parmesan cheese, shredded



  1. Preheat the BBQ on high heat
  2. Blend the spices and olive oil together. lather the oil blend onto the Tusk
  3. Grill the fish for 5 min on each side

Grill Sauce

  1. Mix it all together and let sit in the fridge for one hour before serving

BBQ Garlic Bread

  1. Slice the bread
  2. In a bowl, mix the butter and garlic. Add the parsley and cheese and mix into the butter blend
  3. Grill te bread for a few seconds and turn. Smear the butter blend on the bread and place it on the warming rack until it gets golden brown
  4. Enjoy!
