Cajun Haddock

Haddock is the fish of choice for many of us, the Crew of Salties. As kids, we were fed on Haddock and Halibut as those fishes were not as expensive as Cod which was mostly exported. It as not uncommon to eat Haddock 3-5 times per week and sometimes Bacalao, or salted cod, on Saturday’s. When we became adults, out tastebuds had adjusted so well to the sweet taste of Haddock that we would normally not choose anything other than it. Today, when the poor kids of the past have grown up and are earning a living, they still buy Haddock so now Haddock is more expensive than Cod.

Ingredients

For 3-4 People

750 g Salties Haddock

1 tbsp Corn oil

5 Garlic cloves, chopped

1/2 Leek, cut lengthwise and the cut into 1 cm slices

1 Pepper, deseeded and cut into chunks

2 cm Ginger root, chopped

1 cup Vegetable stock

1 cad Diced tomatoes

2 Bay leaves

2 tsp ground Coriander

1 tsp Cumin

1 tsp Paprika

Salt and Pepper

Directions


  1. Preheat the oven to 400°F
  2. Fry the Garlic, leek, pepper, and ginger on  a pan in the oil
  3. Add the vegetable stock and diced tomatoes, and stir
  4. Add the bay leaves and half of the spices
  5. Cut the fish into portions and rub in the rest of the spices
  6. Pour the Tomato blend into an oven dish and out the haddock pieces on top
  7. Bake in the oven for 10-12 min until the fish is done
  8. Serve with rice
