BBQ Salsa Tusk

Tusk is a funny looking fish. Its like a hybrid of Cod and Wolffish in appearance. The fish version of Frankenstein. Its head is similar to Cod, but the body is similar to Wolffish. But the taste is not funny at all. Its a very delicious fish, with taste and firmness similar to that of Monkfish and Lobster. Tusk is not as well known as Cod or Haddock but it really should be. Its easy to cook in a variety of ways, BBQ, Frying, Baking, and it should be known by all fish lovers. The Salties Crew would place Tusk high on the favourite list if a such list were ever published.

This recipe serves four to five people.

Method

1000 g Salties Tusk

3 tbsp Coriander seeds, crushed

1 tbsp White pepper

1 tbsp Salt

2 tbsp Olive oil

Salsa

3 Tomatoes, chopped

10 cm Cucumber, cut lengthwise, deseeded and chopped

1 Red Onion, chopped

2 Lemons, juice only

1/2 cup fresh Mint, chopped

4-5 cm Ginger root, chopped

1 tbsp Chilli, chopped

1 tbsp Sesame oil

Salt and Pepper

 

Mix the Oil, coriander seeds, white pepper, and oil. Rub mixture onto the fish. Grill the fish on the BBQ for 2-3 min on each side. Put it on the warming rack and cook for another 6 min

Put tomatoes, onion, and cucumber in bowl and squeeze the juice from the lemons over. Add the mint, ginger, chilli, sesame oil, salt, and pepper and mix. Let it sit for 30 min in the fridge before serving.
