BBQ Lime Salmon

Fire, smoke, lime, garlic; the only thing that is missing is the fish itself. Those four ingredients seem to be made for the fish. This dish is made with Salmon but you can switch that Salmon with almost any other fish. Arctic Charr, Tusk, and Monkfish are obvious ones but Cod, European Ling, even Plaice and Sole can be used. When your confidence grows, try out some more challenging pieces like Ling or Sole.

This recipe serves four people.

Method

Fish

750 g Salties Salmon

1 tbsp Pepper

1/2 tsp Paprika

1 Lime, both Juice and Zest

Salt

1/4 cup Olive oil

2 Garlic cloves, pressed

Sauce

3 tbsp Sour cream

3 tbsp Greek yoghurt (plain)

1/2 Lime, Juice and Zest

1 Garlic clove, pressed

1 tsp Honey

Grilled Veggies

Leek

Red Onion

Yellow and Red Peppers

Zucchini

Olive Oil

1 tsp Honey

Salt and Pepper

 

Fish

Grill the fish, skin up, for 3 min and then turn it skin down. Grill for 4 min. Sprinkle the Lime Zest over the fish and the Lime juice

Tip:The garlic oil is great on pizza! When you have the pizza in front of you, sprinkle the Garlic Oil over it and try, there is no turning back now…

Blend the Oil and garlic in a bowl, Lather the fish with the Oil blend and sprinkle it with the Paprika, Pepper, and Salt

Tip:Shred the lime directly onto the fish and squeeze the juice right over it as well. It adds a but of drama to it, and a bit of showmanship of course. Great when people are watching you…

Lower the heat and cook for 5 more min skin down

Sauce

Mix it all in a bowl and let it sit in the fridge for one hour before serving

Grilled Veggies

Chop it all into pieces. Put it in a bowl with the oil and mix until the oil has covered all the Veggies. Then place on the BBQ until you feel it’s done
