Salties Baked Cod Loins a la Mamma

Nothing beats mom’s cooking. “Mamma” means Mom in Icelandic. This one is from the one of the Crew-members of Salties, who is also a Mamma. This dish is great when it’s raining or when the winter kicks in.

Serves three people.

Method

600 g Salties Cod Loins
1 tbsp. ground rose pepper, or Green peppercorns
Salt and black pepper
Juice from half a Lemon
Butter
1 can diced tomatoes
150 g sliced mushrooms
1/2 Red onion, chopped fine
1 dl White wine
Mozzarella cheese, shredded
1 egg

Preheat oven to 400°F. Sprinkle the Cod with the Rose pepper, Salt, Black pepper and pour the lemon juice over it. Take out a Frying Pan, melt the butter on it, and Place the Cod loin on the Pan. Continue frying the Cod until it has a nice golden brown colour on both sides. Remove the Cod (leave butter and mixture) and place it on a Baking dish. Set aside for now.

Take the mushrooms, onion, and garlic and place them in the pan, and let simmer. Add butter if needed. Add the tomatoes and white wine and let simmer for 10 min. Add Salt and Pepper. Pour over the Cod in the baking dish. Mix the egg and Mozzarella in a bowl and pour it over the fish and Place it in the oven. Bake in the oven for 15 min until the cheese has a nice golden colour.

Serve with rice and your favourite salad.
